In Italiens Süden gedeiht eine der ältesten Kulturpflanzen des Mittelmeerraums: der Kapernstrauch. Verspeist werden nicht nur seine Früchte, sondern in erster Linie auch die Blütenknospen. Sie sind eine Delikatesse und erzeugen eine wahre Geschmacksexplosion. Die besten Kapern stammen traditionell von der malerischen Vulkaninsel Pantelleria südwestlich von Sizilien.

Kapern sind die Blütenknospen des im gesamten Mittelmeerraum heimischen Kapernstrauchs. Sie werden in Salz oder Öl eingelegt und mehrere Monate fermentiert. Werden die Knospen nicht geerntet, entstehen daraus zarte Blüten, die als Symbol für die Vergänglichkeit gelten, da sie sich am Morgen öffnen und zur Mittagszeit schon wieder verblühen. Später entwickeln sich daraus die Kapernäpfel oder Cucunci. In der nordeuropäischen Küche kommen Kapern eher selten zum Einsatz, im Mittelmeerraum hingegen gehören Kapern praktisch überall dazu. Sie gelten als leckere Antipasti, da sie den Appetit anregen. Zum Dessertwein und Käse werden in Öl oder Essig eingelegte Kapernblätter gereicht. Die bekanntesten Kapernrezepte sind Spaghetti alla Puttanesca, Vitello Tonnato, Sauce Tartare oder auch Königsberger Klopse. Kapern geben Fisch, Salaten, Suppen und Gemüseeintöpfen mit ihrem scharfen Aroma das gewisse Etwas. Zudem werden die Kapern als Naturheilmittel geschätzt. Schon vor Sonnenaufgang beginnen die Arbeiter im Schein ihrer Arbeitslampen mit der Ernte der Knospen. Später könnten die Blüten sich öffnen, dann sind sie wertlos. Auch ist es in der Mittagshitze zu heiß, die Knospen des Strauchs zu ernten. Verarbeitet wird ein Teil der Ernte in der traditionellen Kapern-Manufaktur Bonomo & Giglio, wo die Knospen mehrere Monate in Salzlake reifen. In die Herstellerfamilie eingeheiratet hat ein Mann, der nicht von der Insel stammt: Gabriele Lasagni. Er gilt als „Revolutionär der Kapern“, denn durch ihn verwandeln sich die traditionellen Kapern in innovative Produkte: Knusprige Kapern und ganz neue Würzpulver sind dabei, aber auch Kreationen, für die er sogar die Kapernblätter nutzt. Gabriele fühlt sich aber auch der Tradition verpflichtet. So werden seine Kapern in Salz direkt aus Sizilien eingelegt – ein jahrhundertealtes Verfahren. Daher besucht er die malerischen Salinen von Trapani und Marsala, die schon seit der Antike existieren. Die flachen Küstengewässer an der Westküste liefern dafür perfekte Bedingungen. Das Salz enthält eine höhere Konzentration an Spurenelementen, gleichzeitig weniger Natriumchlorid. In den Wasserbecken kristallisiert das Salz und wird anschließend „geerntet“. Nur hier gibt es jene Salzqualität, die Gabriele benötigt.

A week after Ukrainian forces launched a surprise attack into Russia’s Kursk region, Russian forces have been scrambling to regain control.

Ukraine troops who launched the surprise incursion across the border claim to control around 1,000 square kilometers of Russian territory.

Russia has deployed missiles and airstrikes in its attempt to contain the Ukrainian advance as the Kremlin attempts to play down the significance of the surprise attack. It is continuing to evacuate Russian civilians from the area.

Ukraine has not stated the purpose of its assault and has made clear that it is not seeking to permanently occupy Russian territory. However the shock attack has served to boost morale within Ukraine, more than two years after it was invaded by President Putin’s forces and it may serve to draw Russian forces away from frontline fighting within Ukraine.
